"Boulder chef Matthew Jansen of Mateo restaurant is debuting his first fast-casual Raglin Market on Friday at 5378 Gunbarrel Center Court. He’s planning a second location to open later this year in Five Points. At the 40-seat Boulder location, diners will order sandwiches, soups, and salads at the counter. Menu items like Niçoise salad and a garlic shrimp sandwich are based off of Mateo’s Provençal cuisine. A daily “market plate” will also combine a choice of meat and two side dishes for $13. Raglin-label wines are forthcoming from Italian winemaker Giorgio Rivetti of La Spinetta." - Josie Sexton
