"The Deep Ellum ramen spot currently operating under a different name has been sold to new owners George Itoh and Andy Tam and will be reimagined with Tam as chef. Ramen will remain central but with a stronger emphasis on traditional Japanese techniques and ingredients, including noodles imported from Sapporo and aged in cedar boxes, and broths made from chicken, miso, and vegetables. The existing restaurant will stay open while the space is revamped but will close temporarily next year for a remodel." - Amy McCarthy
