"Operating in the Fort Worth Stockyards since 1947, Cattlemen’s Steak House has long offered affordable steaks and the fried bull testicles known as “calf fries.” I learned that financier Dan Schryer, an investor behind 101 Studios, filed a liquor license for the restaurant and that new owners—whom Tim Love described as “the guys from Yellowstone”—have invited Love to consult on the menu; Love said he hadn’t eaten there in 25 years and hopes to modernize the menu and service. When Eater Dallas contacted the restaurant, the person who answered the phone refused to identify themselves, and 101 Studios and Taylor Sheridan’s team had not yet commented. One of Cattlemen’s previous owners, Marti Taylor, said diners liked the restaurant kept as it was 50 or 60 years ago, but permit filings updated on November 30 show requests for a mixed beverage permit plus a food-and-beverage certificate (which could allow private-club registration) and a late-hours certificate to allow alcohol sales between midnight and 2 a.m., signaling a possible change in philosophy." - Courtney E.
