"Chef Graham Dodds’s new Deep Ellum restaurant is set to debut at 2551 Elm Street on Wednesday, August 12, occupying 5,525 square feet inside the Pittman Kimpton hotel; it will focus on locally grown produce and proteins and feature Dodds’s famed vegetarian charcuterie, a meat-free riff on the classic French preservation technique. Breakfast offerings include whipped ricotta toast and a yogurt parfait, while dinner highlights include smoked tomato tartare, rabbit agnolotti, a burger made with beef from Battle Creek Farms, and the iconic cream of mushroom soup from The Grape. The restaurant’s website outlines an “approach to clean” with frequent handwashing, face masks provided to diners, daily health screenings for staff, arranged pick-up entrances and exits to support social distancing, and a contact-free payment option.
