What you can get is an interactive, unconventional omakase that swaps tradition for flavors and preparations the team likes. An example: Japanese freshwater eel seasoned with matcha and then fried tableside in bone marrow fat, finished with ponzu and homemade yuzu kosho. A favorite bite is a buttery escolar course with ikura and fresh wasabi. This is a fast-paced dinner that takes less than two hours for around 16 pieces of fish or beef.
