"In Goose Hollow I stopped by 22 Below, Portland’s first Thai rolled ice cream shop, which opened last week and serves coconut-based desserts for humans and their pups. The Eugene-based team uses the Southeast Asian rolled-ice-cream method where a liquid base hits a cold surface, freezes quickly, and is rolled into curled spirals, then mixed with flavors and topped with whipped cream, roasted marshmallows, and other indulgent additions; flavors range from matcha and lavender to chocolate. They even make a banana version specifically for dogs, and offer a variety of drinks from sodas with boba to iced and boba teas. It’s run by 20-year-old ice cream prodigy and pup enthusiast Kady Chen (who opened a Salem location last year with her husband Yao Zhang, her third in the state), and the Portland shop also serves Japanese octopus takoyaki loaded with sriracha, mayo, and bonito flake. They bill themselves as Oregon’s original rolled ice cream, made locally in front of you using fresh ingredients, and the shop is open 11 a.m.–9 p.m. Monday–Thursday, 11 a.m.–10 p.m. Friday, noon–10 p.m. Saturday, and noon–9 p.m. Sunday." - Brooke Jackson-Glidden
