"I noticed Hattie B’s is popping up in Austin twice during SXSW: a vegetarian hot chicken collaboration with Meati and an unofficial record-label pop-up with Oh Boy Records. Meati—whose mushroom-based product Brian Morris praised for its texture and juiciness similar to great fried chicken—helped create a round fried-white-bread bite topped with a fried Meati hot chicken bite, kosher dill pickles, and comeback sauce; the item is vegetarian (not vegan) because the breading contains whey protein and the comeback sauce contains dairy. The record-label showcase will feature Nashville-hot or Southern (no spice) chicken drumsticks, banana pudding, concerts, and vinyl for sale. Food at both pop-ups will be available on a first-come, first-served basis. Hattie B’s was started in 2012 by Nick Bishop Jr. and Nick Bishop Sr., has expanded from Nashville and Memphis to Birmingham, Atlanta, Las Vegas, and Dallas, plans to open its first Austin location in the fall in the former Maria’s Taco Xpress space on South Lamar, and has canceled a planned Houston opening." - Nadia Chaudhury
