"Tucked behind neighborhood favorite Chela’s Cocteleria in Miami Lakes, I discovered Santa Diabla, a new European-style speakeasy aiming to fill a void in the area’s nightlife. The bar serves modernized classic cocktails—most notably the popular ‘Alpha Blue Blazer,’ a Macallan 12-based cocktail set on fire before serving—and a variety of Spanish tapas such as arancini Catalanes and Pata Negra 100 percent de Bellota Jamon Iberico. Led by Daniel Gonzalez and a team of Miami Lakes locals, the concept intentionally steers away from the area’s 'copy and paste' bars by focusing on personalized hospitality and a sophisticated food-and-drink menu. The ambiance shifts with the night: from a relaxed, warm-lit, soft-music tapas-and-drinks vibe from 5 p.m. to midnight to a louder, party 'Diabla' mode after midnight with chupitos being passed around and a disco ball.
