Its bolani—fried, filled flatbreads—are prepared with a potato-and-chive stuffing and served with a tangy tomato chutney, and meals are commonly accompanied by dogh, a frothy yogurt drink flavored with cucumber and mint that provides refreshment and a true taste of home.
