The New Pablo’s Coffee Will Feature a Cafe, Lab, and Roasters | Eater Denver

"Opening a new 6,000-square-foot headquarters at 7701 East Colfax Avenue by late March or early April, this longtime Denver coffee shop is adding a retail cafe, commercial roastery, training and tasting lab, and offices. The plant-filled space will feature living walls and local crafts, on-site roasting capacity with storage for two roasters and up to 80,000 pounds of green coffee, and a lab where employees, wholesale clients, and members of the public can train on espresso machines, practice pour-over techniques, and attend home-brewing and other method classes. Founded in 1995 by Craig Conner, the business currently operates two shops (a 17-year-old location at 6th Avenue and Washington Street and a five-year-old cafe at 13th and Pennsylvania), employs about 32 people, and distributes to more than 100 wholesale accounts as it scales into a multi-purpose facility." - Josie Sexton
