"Emmerson, a 5,000-square-foot restaurant space in Boulder, has closed after 17 months of operation. The 'neo-bistro' was located at 1600 Pearl Street and faced high occupancy and personnel costs, which made it difficult to sustain operations. Despite its closure, owner Ben Kaplan is seeking partners for a new venture in the space. The restaurant, which opened in August 2017, was supported by a team of experienced local and national restaurant professionals and was praised for its dishes and aesthetic.
