Made with New Mexico chiles, varieties include red carne adovada (New Mexican-style pork), red chile beef, green chile chicken, green chile corn, red chile machaca, and red chile beef with blue corn. Smothered with chile and cheese, tamales are $6.50 a la carte or $40 for a frozen dozen, which can be ordered in advance.
