"Opening in Legacy Hall on Friday, September 27, I learned Hōru Sushi is a freshness-focused sushi counter and the first restaurant venture for respected chef Chin Liang. After more than 20 years behind sushi counters—including most recently helming the knife station at KÄI—Liang emphasizes interpersonal interaction with diners and keeps the sashimi menu deliberately small, relying on just three types of fish available daily. Core offerings include an ahi tuna tower (spicy tuna, crab, avocado, sushi rice, tobiko, shredded nori, wonton chips, and wasabi aioli), a Legacy Hall roll (tempura bacon, crab, avocado, tuna, salmon, yellowtail, masago, topped with sliced lemon and scallions), and a truffle salmon roll (soy paper, fresh salmon, truffle oil, avocado, tempura puffs, spicy mango, and eel sauce); underwater specials, depending on seasonal availability, will be sourced from the Tsukiji Market in Tokyo.
