"I attended a preview of the downtown Silver Spring cafe Citizens & Culture (8113 Georgia Avenue, Silver Spring, Maryland), a sleek new bar and restaurant from Tsega Haile outfitted with large flat-screen TVs, working fireplaces, and a lofted stage with a state-of-the-art sound system for DJs and shows. Chef Ryan Hackney tested a five-course tasting—co-developed with chief chef consultant Jessica Shields—that will appear on the menu: Bagel 'n Luxe (everything bagel toast points, whipped cream cheese, smoked trout roe, micro herbs, and espelette pepper); a crudo sourced from NYC’s Fulton Fish Market; a barbecue squash salad; creamy asparagus bisque; a Godfather-inspired “Luca Brasi Sleeps With the Fishes” (pan-seared Atlantic salmon, fire-roasted butternut squash purée, and roasted squash); and the main event, “The Delvey” (braised short rib, maple bourbon–glazed carrots, and edible flowers, with a 72-hour–marinated mushroom cap as the vegetarian option)." - Tierney Plumb
