Swanky San Diego Steakhouse Rare Society Opens in Las Vegas | Eater Vegas

"Making its Nevada debut Wednesday, July 2 in southwest Las Vegas’s UnCommons shopping and dining area, this retro-swanky, Rat Pack–inspired steakhouse from chef Brad Wise and Trust Restaurant Group brings a live-fire, Santa Maria ranchero-style grilling approach: meat seasoned simply with salt, pepper, and garlic, seared over American red oak, then finished low and slow — a technique used across wagyu steaks, Pacific swordfish, and flame-kissed vegetables. The menu emphasizes in-house butchered steaks and location-exclusive wagyu tomahawks (including a richly marbled Snake River Farms tomahawk) and features dramatic 53-ounce dry-aged steak boards presented on custom-designed lazy Susans with bearnaise, horseradish, and buttery bone marrow; standout cuts include 40-day dry-aged bone-in New York strips and Wise’s “bullseye” rib-eyes. Seafood offerings lean large and indulgent, from broiled oysters with yuzu arugula butter and crispy capers to creamy lobster mashed potatoes and $275 seafood towers overflowing with crab, ahi tartare, and a whole Maine lobster; Las Vegas–specific items include Alaskan king crab. The cocktail program is similarly carnivorous, with Old Fashioneds made with dry-aged, fat-washed bourbon, rosemary oleo, bitters, and a lardo garnish, and desserts include bananas Foster cheesecake paired with an espresso martini.
