"Deep Ellum’s first cidery is ready to open its doors next week after overcoming construction and permitting delays. The new establishment, Trinity Cider, will debut on Friday, October 12. The cidery features fermentation tanks in the taproom, a dark wood bar top, hanging Edison bulb lighting, black tile accents, and exposed brick walls. Trinity Cider will offer six ciders on draft initially, including 'The King’s Peach,' 'Deep Ellum Dry,' and a dry rosé cider colored with hibiscus flowers. The team is testing additional flavors such as prickly pear cactus, sour cherry, grapefruit, habanero cucumber, a spiced blend, and a ghost pepper-infused cider. They successfully raised $10,000 through a Kickstarter campaign for equipment, barware, and furniture." - Alaena Hostetter
