Seif puts gourmet twists on traditional Egyptian dishes, including koshary salad made with mefatela (a rural dough made of ground unprocessed wheat and skillfully kneaded with flour, producing little pearls similar to couscous), molokhia (classic green mallow soup) with rabbit, and savory qatayef, a pancake-like pastry that Egyptians stuff and fry, enjoyed both sweet and savory.
