"Chama Mama is one of the city’s better restaurants featuring the cuisine of Georgia, not the state but the former Soviet republic in the Caucasus Mountains. Cold composed salads laced with walnuts and meaty kebabs served on skewers are its forte, but what has really made the restaurants popular in New York City are the freshly made breads, especially khachapuri adjaruli, a dough boat filled with molten cheese and egg.
