"Replacing a Submarina sandwich shop in a 1,704-square-foot space in the Village of Mira Mesa shopping center (home to Crab Hut and Sprouts Farmers Market), Isshido Ramen will feature an open kitchen and ramen bar and is staffed by a ramen chef from Japan. Its specialties include a take on tonkotsu — the milky pork bone broth also called hakata ramen — whose bone broth is simmered for eight hours with excess oil removed for a soup that's less heavy and rich; tantan-men, a spicy Chinese-influenced ramen topped with ground meat; a vegetarian option with a creamy sesame broth; and a luxurious version made with mushroom and truffles. In addition to ramen, the shop will serve snacks and appetizers such as homemade gyoza, plus fried beef, pork, or tofu cutlets served with rice and salad with the optional topping of Japanese curry." - Candice Woo
