"Chicken Salad Chick, a fast casual restaurant obviously centered around chicken salad, is on its way to Houston. The Alabama-based eatery already has more than 80 restaurants across 11 Southern states with plans to launch a dozen more outposts in the coming year, and Houston will be part of that expansion, according to Market Insider. The eatery was founded by Stacy and Kevin Brown in 2008, when Stacy was notified by her local county health department that she couldn’t continue making and selling her recipes out of her home kitchen. 10 years and 85 outposts later, the company has landed on Inc.’s list of the 500 fastest-growing U.S. companies for its dozen chicken salad flavors including fruity, savory, and spicy varieties. Menu items have female-centric names and list the calories for each dish, like the Jazzy Julie which clocks in at 420 calories and features a spicy mixture of cayenne pepper, bacon, and cheddar. Diners can order the eatery’s chicken salad either on a sandwich or greens and have the option of pairing it with soup. No word yet on when Chicken Salad Chick will arrive, but stay tuned for more details." - Alaena Hostetter
