"For too long, the brisket trimmings at celebrated barbecue joint Podnah’s Pit were gong to waste. Then the team headed by owner Rodney Muirhead decided to turn them into burgers. The resulting pop-up was popular enough that now Lone Star is a brick-and-mortar restaurant in the former La Taq space next to Podnah’s. Expect a simple menu of burgs and hot dogs and things of that nature, plus some cocktails (they’ve kept the La Taq bar)." - Paolo Bicchieri
