"Scheduled to debut on April 29 in the Carlsbad neighborhood of Bressi Ranch, the 5,000-square-foot Eureka! outpost will seat 184 diners and include a bar fronted by green glazed tiles and a patio with an outdoor fireplace. Building on the popularity of its bustling Westfield UTC and San Diego State University campus locations, it's known for decadent burgers such as the Bone Marrow Burger with shiitake bone marrow butter and the Fresno Fig Burger with fig marmalade, melted goat cheese and bacon; it also offers beer-friendly snacks like Lollipop Corn Dogs and Mac N’ Cheese Balls and serves weekend brunch from 10 a.m. to 2 p.m. Beverages are a big focus, with 30 taps of local beer, cocktails, and an impressive spirits collection of more than 40 small-batch whiskeys including hard-to-get bottles like Pappy Van Winkle.
