"Sant Ambroeus quietly skied into Aspen’s gilded dining scene earlier this year, bringing its famed Milanese trattoria to altitude. Tucked in a painstakingly restored 1889 edifice on Main Street, the trio of sleek venues — a dining room, lounge, and courtyard — was designed by the famed Giampiero Tagliaferri Studio. Executive chef Angelo Delle Donne has infused the familiar menu (additional locations include Manhattan, The Hamptons, and Palm Beach) with Colorado flair, including entrees exclusive to Aspen like Ossobuco alla Milanese with roasted Yukon Gold potatoes and Polenta Fegato e Funghi with locally foraged mushrooms.
