"Founded by East Coast natives Cory and Jaclyn Yates, this newly opened Northwest Houston shop serves hand-rolled, traditional East Coast–style bagels that are boiled before baking using an authentic, Big Apple–approved technique. Offerings include flavors like chocolate chip, veggie, sun-dried tomato, and cinnamon raisin, with dollops of cream cheese behind the counter ready to schmear. The menu is intentionally simple given limited space, featuring a small selection of lunch and brunch sandwiches built with items such as Taylor ham pork, plus coffee from District Roasters. After evolving from a home business to a popular vendor at local farmers markets, the team opened a permanent location and sold out of 500 bagels in the first hour of pre-opening service; they are now exploring a commissary to expand off-site production or reworking their layout to increase kitchen and fridge capacity.
