Sweet and Savory Waffle Sandwiches Are Headed to the Heights - Eater Houston
"After earning a reputation as one of the city’s most beloved food trucks, the Waffle Bus will expand to a permanent location in the Heights. Owner Phi Nguyen tells Eater that the restaurant has been in the works for more than a year, and Nguyen finally signed a lease for the food truck’s first permanent outpost in August. 'Since then, we’ve been working on the floor plan, blueprints, and everything for the look,' Nguyen says. 'We’re about to submit to the city for permitting, and that process takes a little time. Once we get the permitting done, it shouldn’t take any longer than 3 or 4 months to do the construction.' For the unfamiliar, Waffle Bus is known for its waffle sandwiches, which involve folding a freshly-made waffle in half and filling it with a burger patty and cheese, or buttermilk fried chicken drizzled with honey butter and spicy mayo. 'Fryders,' or sliders with waffle fry buns are also on offer, along with fries loaded with fried chicken nuggets. When Waffle Bus arrives in its permanent home, Nguyen hopes to expand the menu and bring back former daily specials, like a waffle stuffed with chicken fried bacon, lettuce, and tomato. Diners can also expect breakfast dishes like bacon-egg-and-cheese Fryders. Nguyen optimistically anticipates that Waffle Bus will arrive in the Heights in February." - Amy McCarthy
