"I discovered a Laotian-inflected pizzeria and self-proclaimed dive bar run by Khampaeng Panyathong — who also co-owns the acclaimed Taurus Ox — that opened in a former pizza spot and kept its pizza deck oven. Panyathong more or less invented his Laotian-style pizza on the fly: pies topped with pork belly; ground pork prepared like the meat in khao soi soup (he likens it to a Bolognese); tua nao, a fermented bean paste; and even bamboo, which he jokes may never have been on a pizza before. They also offer familiar varieties like pepperoni and cheese, but even the classics get twists (for example, a Hawaiian with Canadian bacon, pineapple, jalapeños and a togarashi spice blend). For now the focus is on selling whole pies and pizza by the slice (sides are planned later). The name Ananas means “pineapple,” and Panyathong hopes the restaurant will be a safe space for people who like pineapple on their pizza.
