"Painted in a rainbow of colors and set among steel-drums, fire pits and Bollywood music, the Chandni Chowk truck is where I go for chai and pani puri that taste like home: I try cutting chai — a stronger, longer-brewed 'half cup' with concentrated tea, ginger and cardamom — and matka chai, which picks up an earthy, smoky note from the clay mug (the mugs are customarily smashed afterward, though you can take one home). For pani puri, the staff fill each crunchy puri with mashed chickpeas and one of five waters — mint, khatta meetha (sweet-and-sour), kala khatta (tart), pineapple (sweet) and a tart, spicy pomegranate — and hand them over to be eaten immediately; beware, some of the panis are a little spicy.
