"Originally based at the Yard Food Park as a food cart, this project specialized in spicy ramens bolstered by house-made chili oil; the cart’s noodles were produced in a commissary on a second-hand Yamato imported noodle machine. The cart would regularly sell out, but running it took a toll—Callahan and his then-girlfriend were burning out after long days (he describes working 11–12 hours at the cart plus three hours of prep), and the cart closed almost a year into its tenure." - Brooke Jackson-Glidden
