"Located on the second level of the Mansfield Street hotel, this restaurant revives classic French brasserie cooking under executive chef David Pellizzari, who brings experience from Buvette Chez Simone and his former Lili Co and cites Escoffier as an influence. The menu leans on 19th- and 20th-century French technique with icons like garlic snails, frog’s legs, a savory petits pois and boudin crème brûlée, and seafood-forward plates such as an oysters Rockefeller–style dish that substitutes clams and a smoked mackerel finished under the salamander with spinach, shallots, garlic, and pecorino. More elaborate, revival-style offerings include a pork belly cassoulet with apple and sous-vide cabbage and a standout rabbit à la royale en croûte with boudin, foie gras, nutty camelina, and truffle oil, while Pellizzari plans to add other complex traditional dishes over time. At the same time, hotel-friendly staples are taken seriously — steak-frites is acknowledged as necessary, and the in-house ground burger comes with guanciale instead of bacon, gruyere, confit tomato, and a Guillaume bun. Breakfast receives attention as well, with fruit yogurt built from house-made conserves, bagels with house-smoked salmon, and leftover pastries turned into pain perdu. The wine list favors classic French selections like Chablis and Sancerre, cocktails are reinvented retro styles, there’s a good selection of whiskies and cognacs, and the dining room is a sleek, modern space designed by Zebulon Perron.
