"A healthy fast-casual chain is opening a Boulder outpost in mid-August that emphasizes fresh, chef-driven salads, wraps, and bowls — including a signature “Mother Earth” bowl with grains, sweet potatoes, avocado, hemp seeds, and vegetables. The menu is built for dietary variety (vegetarian, vegan, paleo and other “-free” options) and features proteins such as non‑GMO tofu, sustainable salmon, and natural chicken and steak; beverages include tea, kombucha, wine, and local beers.
