"Elephant + Vine, a casual offshoot of Spirit Elephant in Wilmette, the first vegan restaurant on the North Shore, will open its first location on Thursday, March 17, serving Buffalo cauliflower bowls, Impossible burgers, and vegan chicken sandwiches.
