"Their food truck, named Regina, launched in October 2019 after a business plan and a small family gift; the early days were a roller coaster, with the truck struggling to get prime spots and even doing about $100 on a worst day parked at an Amazon Fulfillment Center despite needing roughly $1,000 a day to be sustainable.
