"Perched on the ninth-floor rooftop of a new Cherry Creek hotel, this glitzy poolside bar opens with 180-degree panoramic views from downtown to the Rockies and a tropical, camera-ready vibe. General manager Chris Willers built a service-forward cocktail program centered on classic riffs batched ahead of service, canned in-house into short aluminum cans with bright labels (using a custom sealer) and finished to order—for example, one swizzle is poured then topped with ginger beer and grated nutmeg. Signature drinks include a mojito-style Lieutenant made with mint Lifesaver simple syrup, a Catamaran swizzle fashioned with Plantation pineapple rum, a Saigon 75 featuring a spice-trade gin, plus nautical-themed pours such as a Mile High City Mai Tai, a south-of-the-border mule, and a bourbon with honey and lime; cocktails are $15.
