"Deep Ellum’s first brewery devoted to hard apple ciders is slated to open in late August next to Pecan Lodge, featuring visible fermentation tanks behind the bar and an industrial interior with exposed Edison bulbs; seating includes about 30 inside and 20 in a covered courtyard. The initial tap list will offer six flavors with six more to follow as the team narrows selections from roughly 20 top brews, including a peach-infused cider, a slightly vinegary balsamic pomegranate, a sugar- and gluten-free completely dry option that drinks like champagne with an apple finish, and a ghost pepper–infused blend that requires a waiver (and can be toned down by mixing with a regular cider). Co-owner and head ciderist Josh Price, a Midland native and former Napa winemaker, applies winemaking fermentation techniques while enjoying the greater creative flexibility of apple-based brews.
