"Set to open by summer at 1922 13th Street, this Aspen-based fine dining steakhouse (part of CP Restaurant Group alongside The Monarch, CP Burger, and Wild Fig) will serve prime cuts in skillets with toppings such as buttered lobster and sauces ranging from chimichurri to blue cheese bone marrow butter. In Aspen, appetizers run from $14 for the soup of the day to $21 for jumbo lump crab cakes, and a bar menu offers items like steak and eggs and mussels and frites. Aspen’s location is set in an old miner’s cabin and designed in a film-noir style with red booths and drapes, ornate chandeliers, and black-and-gold accents; the new Boulder restaurant is currently being renovated by owners Craig and Samantha Cordts-Pearce, with opening details to come." - Josie Sexton
