"Corktown’s latest resident pizzeria has finally set the date. Detroit-style square maker Michigan & Trumbull is slated to open its doors to the public on Wednesday, January 29 in a two-story brick building along West Elizabeth Street. Partners Kristen Calverley and Nate Peck are metro Detroit natives who together developed their own take on Detroit-style pizza while living in Pittsburgh. They got their start by sharing pizzas with friends and eventually evolved the business into a food stall at Federal Galley, one of two Galley Group food halls in the city. In 2019, the pair moved back to Michigan to focus on opening a full-service restaurant and bar near the intersection that gave the business its name. (They briefly opened a location inside Fort Street Galley, which has since become a dedicated Sicilian slice shop called Square Peggy’s.) Michigan & Trumbull will debut next week with its full menu of pizzas, salads, barbecue-spiced waffle fries, roasted veggies, and fried calzones called Boblo Boats. Expect options like an $8 build-your-own vegan pizza with unlimited veggies or the Bagley Chorizo with mozzarella, chorizo, pickled red onion, and cilantro ranch. Diners will have to wait a few weeks for the liquor license, which is still waiting on approvals from the state. The 66-seat restaurant features a dive bar aesthetic created with help from Five/Eighths architecture firm and will include a rooftop patio and bar when the weather improves this spring. Initially, hours will be limited while the restaurant awaits a liquor license, but Calverley plans to expand them to midnight Thursday through Saturday, once that’s in place." - Brenna Houck
