"I'm excited about a new Champagne-focused, 10-seat bar opening May 26 as an expansion of Tasting House in Los Gatos. The Champagne Bar at Tasting House (368 Village Lane, Los Gatos) is a passion project from owners Denise and Mike Thornberry, who opened the restaurant and wine shop in 2022; they've created an intimate, speakeasy-style space with just 10 seats and three bistro tables for couples while aiming for a casual, approachable vibe — they want Champagne to feel like an everyday option. The wine list is strictly Champagne all the time, poured by staff who are all at least Level 1 sommeliers, available by the half glass, full glass, or bottle, and highlighted by a $75 flight of five 2-ounce pours that could include a grower Champagne, vintage and non-vintage selections, and brut nature. Food pairings lean classic and luxe: a full caviar service with roughly eight caviar options, crab legs, oysters, and a caviar crostini served with uni, wasabi, and crème fraîche, alongside more casual snacks like black-truffle pomme frites and elevated tater tots, plus a truffle grilled cheese and a cheese-heavy menu for building boards.
