"After leaving London’s Holborn Dining Room in 2022, English chef Calum Franklin joined the Bertrand Group’s Public House, his first role in the French capital. Nicknamed the “pie king” after he set up Holborn’s pie room in London, Franklin brings a handful of his iconic latticed pies (like chicken and wild mushroom, Montgomery cheddar, dauphinoise potato and caramelized onion, or braised beef and marrow) to this colorful British brasserie a couple of blocks from the Opéra Garnier. You’ll also find a selection of pub staples like Scotch eggs (done here with boudin noir), fish and chips, sausage and mash, a very good sticky toffee pudding for dessert, and, of course, plenty of beer.
