"Opening Sunday, February 17, a remodeled 50-seat eatery in the Mira Mesa complex across the street from Menya Ultra Ramen debuts with an open kitchen and ramen bar; the owners also run a ramen restaurant in Fukuoka, Japan, the birthplace of Hakata-style ramen. At Isshido, they’ll offer classic tonkotsu ramen made with a milky boiled pork broth topped with sliced pork belly and other garnishes, as well as Chicken Paitan with chicken breast and a shiitake mushroom and chicken soup and a vegan version made with spicy miso sesame-based stock and teriyaki tofu. They’re also bringing a trend from Japan by adding a fresh truffle sauce and truffle oil to a twist on tonkotsu served with oyster mushrooms, and the restaurant says it eventually plans to make noodles in house. Open from 11 a.m. to 9 p.m. Sunday through Thursday and from 11 a.m. to 11 p.m. Friday and Saturday, the menu extends to pork tonkatsu stuffed with cheese and sesame leaves, sake-marinated prime steak fried until medium rare and served with rice and salad, plus udon, takoyaki, and oden; sake and bottled beer are currently available, with draft beer to come." - Candice Woo
