"Coming to Bravery Chef Hall this summer, Nuna Nikkei Bar will be led by Andes Cafe chef David Guerrero and will blend Japanese techniques with the flavors and ingredients of South American cuisine; Guerrero says he loves Peruvian food—especially ceviche, which is the inspiration—and, as an Ecuadorian, notes the strong Japanese and Asian influence on his culture and the similarities between Peru and Ecuador. Guerrero isn't ready to reveal menu details yet but is likely to follow in the footsteps of Nikkei pioneer Nobu and will stage in Lima at what he describes as the world’s best Nikkei restaurant.
