"A historic hotel that hosted the special mentors’ dinner where chefs presented tribute dishes to judges and their mentors; service highlights included a caviar-laced gumbo built on a double roux (which unfortunately contained a crab shell for one diner), a slow-roasted salmon with burnt citrus and marrow broth, a spiced duck breast criticized for being under-seasoned, and a yellowtail served two ways that suffered from timing and handling issues — the olive oil–poached sea bass in an Ibérico ham broth was singled out as a subtle yet powerhouse winner, earning its chef the $10,000 prize." - Greg Morabito
