"Launched by Michelle Wallace as a solo sandwich concept that will begin with a series of pop-ups around the city, this new sandwich operation showcases her formal culinary training and respect for tradition. The first pop-up is scheduled for Sunday, January 29 from 4 to 8 p.m. during a Lunar New Year celebration at a Midtown tech hub, where she’ll be serving her cult-favorite biscuit sandwiches as a sneak peek of the larger menu to come. A Texas Southern University and Culinary Arts Institute of Houston grad who also studied in China, she blends barbecue techniques and comfort-food sensibilities into hearty handhelds—fans can expect creative takes informed by her time as an executive chef, including riffs on smoked bologna, brisket biscuits, and spicy H-Town hot chicken layered with a house-made Viet-Cajun sauce.
