"Birria is everywhere in Seattle, but there may not be a better place to get slow-cooked beef than Birrieria Pepe El Toro, which opened a brick-and-mortar in the University District after spending some time on the brewery circuit. When we say they specialize in birria, we’re not kidding — there’s birria tortas, birria ramen(!), birria mulitas, and more. If you want to mess yourself up with melted cheese, tortillas, and aromatic beef, grab some quesa-tacos and dip them into the consomé broth. Just get plenty of napkins.
