"Located at 1201 Wilson Boulevard at the base of JBG’s Central Place Plaza across from Nestlé’s headquarters, I found Salt to be a more mature-feeling cocktail bar that’s meant as an "escape" from Rosslyn’s 9-to-5 bustle. A short menu offers 12 shareable items — oysters on the half shell, shrimp cocktail and a platter of tinned Ortiz fish (sardines or anchovies) served with sesame crackers, butter, pickled mustard seeds and cornichons — while large-format entrees include a whole grilled branzino and a 24-ounce cowboy ribeye with roasted mushrooms and red wine jus; there’s also a wagyu burger topped with mushrooms, gruyère, crispy onions and white truffle aioli. An eight-seat granite bar showcases MHG beverage director Paul Williams’s cocktails, including the Silly Rabbit (Roku gin, yellow Chartreuse, carrot–star anise juice, almond orgeat, ginger and fresh lemon), Savor The Moment (shiitake-infused Toki Suntory whiskey, yellow Chartreuse, maple and Angostura bitters) and a seasonal Into The Woods (Maximo mezcal, Salers aperitif, Zirbenz pine liqueur, honey and Angostura bitters). Dramatic photographs of the Bolivian salt flats at sunrise and sunset help set the mood.
