"Planned to open this summer inside a fully refurbished 75-year-old steel Quonset hut within the Santa Ana Diesel development, Les Brisket Hut is envisioned as a casual taco-shop-meets-wine-bar serving a succinct menu of tacos featuring Heritage’s signature Texas-style smoked beef brisket tucked into handmade beef tallow tortillas. Because the 1,500-square-foot Santa Ana space is too small for on-site smoking, the Castillos will transport brisket, barbacoa, pulled pork, house-cured and smoked bacon, sausages, and chorizo from their 5,000-square-foot San Juan Capistrano restaurant. They plan to pair the tacos with natural wines from California and Texas and craft beers, periodically serve Heritage Barbecue fan favorites including the smoked brisket banh mi, and emphasize the Castillos’ local roots—both were born or raised in Santa Ana and started pop-ups in north Orange County—making the project feel like coming full circle." - Cathy Chaplin
