"Yet another multimillion dollar dining project is on its way to the Strip’s Showcase Mall, this time creating a two-story, flagship expansion for chicken finger kings Raising Cane’s. Revealed back in March, the latest paperwork confirms the 24-year-old chain will spend an estimated $185,300 to demolish two floors to the south of the mall’s food court. Facing New York-New York and allocating an estimated $1,550,000 to also overhaul the 3,883-square-foot space, the fast-casual restaurant will be roomy enough for a maximum occupancy of 111 inside. Soon to begin work on the makeover, but not expected to debut this year, Raising Cane’s joins a still-in-the works Olive Garden and an elaborate, rooftop micro-brewery from BrewDog, both located at the northern tip of the retail and entertainment hub and each working with their own seven figure construction budgets. Serving until 2 a.m. on Friday and Saturday, Raising Cane’s operates 13 local locations, focused on a compact menu of chicken fingers, crinkle-cut fries, Cane’s sauce, Texas toast, and coleslaw." - Bradley Martin
