"Planned to open in early November in the West Loop near Randolph Restaurant Row, Mako will combine sushi and hot-food items with a 13-seat counter and 10 table seats, two seatings nightly, and an intended price point of about $175 for 23 courses (including rice dishes) with roughly $85 wine pairings. Park says he’ll use more seasonal and daring ingredients, leverage relationships with Juno’s fish suppliers to bring specialty cuts, and mingle familiar Japanese ingredients with Western techniques (for example, special garnishes); he’s also talking with Rodrick Markus of Rare Tea Cellars about Michigan-grown wasabi. Chefs Joon Park (no relation) and Joon Kim will help run the kitchen, the restaurant is named after the mako shark (Park’s favorite fish), and it will be located on the lower level of The Parker at 730 W.
