"Operating out of St. Roch Market in the Marigny, I see Laksa Nola as Than Lin Regules’s effort to bring Malaysian and Burmese specialties to New Orleans; named after the fragrant noodle dish, it reflects Lin’s upbringing in Burma and her years in Malaysia. I found the laksa described as typically made with rice noodles and a slightly thicker, grittier broth (or sauce) with a sour, sweet, and spicy flavor. The menu also features familiar items like shumai and satay alongside less-recognizable dishes such as Omunoodles (Lin’s version of omusoba) and nasi lemak (rice cooked with coconut milk and pandan leaf). After a year of popping up around the city, Lin has taken this permanent spot and Laksa Nola follows the market’s hours (Sunday–Thursday 11 a.m.–10 p.m., Friday–Saturday until 11 p.m.)." - Clair Lorell
