"In the years since Pierre Touitou left his perch at Vivant Deux and Déviant, diners wondered when he’d return with a solo project. It would take a few years and a stint at Luma Arles, but the chef is back with this slick neo-bistro tucked between the Tuileries Gardens and the Palais Royal. Touitou and his team prepare an ever-changing roster of dishes from an open kitchen, concentrating on only a few ingredients or condiments at once. The lo bak go, a Chinese turnip cake served like panisse, is a hit among the starters, ideally followed by the braised beef shoulder served with a side of pkaila (stewed spinach) blended with beef tongue.
