"At the Los Feliz and Santa Monica locations, I learned the shop relies heavily on turkey: one of its two house sandwiches is always turkey and the crowd favorite comes with manchego, iceberg, chopped pickled onions, and smoked paprika aioli. To keep making that sandwich they've been stockpiling deli turkey from supplier Hobb’s, but Hobb’s supply has become unreliable; once their stock runs out they may have to pivot to confit chicken legs or duck.
